Many people often assume that because it’s canned and cheaper, the nutritional qualities of canned fish are compromised. This largely isn’t the case, however.
Canning is a method of preserving foods in general. It was first developed in the 18th century as a way of providing a safe, reliable food source for soldiers and sailors. Although the process itself varies according to the product, it involves storing food in an airtight container and subjecting it to sterilization by heat, which kills harmful bacteria and prevents spoilage. Protein, carbs, fats, and most minerals and fat-soluble vitamins are unaffected by the process. Surprised? The nutrients in canned foods tend to be relatively stable because they are protected from the deteriorating effects of oxygen.

The tuna was hand-cut and preserved with organic extra virgin olive oil, delivering a rich, exceptional flavor. With just a little creativity, it can be turned into a gourmet appetizer, a fresh salad, a flavorful sandwich or a comforting main dish. You can also eat it straight from the can (no judging!).
2 cans Prozis Solid Tuna in organic extra virgin olive oil
2 tsps Dijon mustard
½ cup white bread crumbs
1 tsp lemon zest
1 tbsp lemon juice
1 tbsp water
2 tbsps fresh chopped parsley
2 tbsps fresh chopped chives, green onions, or shallots
Salt and black pepper
1½ tsp tabasco
1 egg, whisked
1 tbsp extra virgin olive oil (or olive oil from the cans of tuna)
½ tsp butter
Drain the olive oil from the tuna cans, reserving 1 tablespoon.
In a medium bowl, mix together the tuna, the mustard, the bread crumbs, the lemon zest, the lemon juice, the water, the parsley, the chives, and the tabasco. Season with salt and pepper, stirring and tasting as you go. Once you have reached your desired seasoning, stir in the egg.
Divide the mixture into 4-6 portions. Shape each portion into a patty and place on a plate or tray lined with parchment paper. Place the patties in the fridge for about 30-40 minutes. Chilling them will help firm them up so they hold together when frying. If you're in a rush, pop the patties in the freezer for 5 minutes instead.
Heat the olive oil and a little butter (for taste) in a frying pan over medium heat. Gently place the patties in the pan and cook until nicely browned, 3-4 minutes on each side.
